Ingredients:
1 lb salmon fillet, skin removed, finely chopped or pulsed in a food processor
1/4 cup breadcrumbs
1/4 cup finely chopped red onion
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon lemon zest
Salt and pepper, to taste
1-2 tablespoons olive oil, for cooking
Hamburger buns
Lettuce, tomato slices, avocado slices (optional, for serving)
Instructions:
Prepare the Glaze:

In a small bowl, mix together the soy sauce, honey, and lemon zest. Set aside.
Make the Salmon Patties:

In a large bowl, combine the finely chopped salmon, breadcrumbs, red onion, Dijon mustard, mayonnaise, salt, and pepper. Mix until well combined.
